*Note: For my non-Greek readers, hilopites is Greek pasta that can be bought in Australia at any grocer that sells Greek food products. If this is not possible try making this dish with fettuccini cut up into shorter length pieces or you can choose another soft short pasta

Ingredients:

1/4 cup of olive oil
2 tablespoons of butter
1 chicken cut into serves
6 onions cut into cubes
Salt and freshly ground pepper
1 and 1/2 cups of tomatoes, can be fresh peeled and cut up or can be tinned whole tomatoes
2 tablespoons of fresh mint chopped fine
1/2 teaspoon of dry mint
1/4 cup of fine hilopites
1/2 cup of walnuts

Method:

1. In a large wide saucepan heat the oil and butter together on high heat and sauté till the chicken is golden
2. Remove from heat and set aside
3. Lower the heat to medium and sauté the onions till translucent
4. Put the chicken pieces in with the onions; add the salt, pepper and tomatoes
5. Add just enough water to cover the chicken. Cover and allow to cook for about 50 minutes
6. Add the mint just before the chicken is cooked
7. Take the chicken out without the sauce, place in a baking dish and put in a hot oven covered
8. Add a cup of water to the sauce, bring to boil and add the hilopites till cooked
9. Serve the hilopites on a serving dish putting the chicken on top and sprinkle with walnuts
