Ingredients:
1 kilo of potatoes
salt and pepper
2 tablespoons of butter
1 large onion, cut finely
4 large eggs, beaten slightly
1 cup of grated kefalograviera
1/2 cup of milk
2 teaspoons dried oregano or mint
1/2 cup fresh parsley, cut finely
3 tablespoons of virgin olive oil
1/2 cup of broken up stale bread

Method:
1. Boil and peel the potatoes and make into a fine mash.
2. Heat the butter in a large frypan and sauté the onion.
3. Add the onion into the mashed potato.
4. Add the eggs, cheese and milk to the potato mixture and mix well.
5. Add the oregano, parsley, salt and pepper.
6. Heat the oven to 200°C.
7. Oil an oven pan, 23x35cm size.
8. Spread the mixture in the pan and knife into strips.
9. Sprinkle with bread and oil.
10. Bake for 50-60 minutes until golden. Remove from the oven and serve either hot or at room temperature.
