Ingredients:
2 cups of brown lentils
1 bay leaf
1 clove of garlic
some oregano
1 onion, finely cut
1 large tomato cut into cubes
2 tablespoons of chopped parsley
10 (aprox.) Kalamata olives without the pips (use any olive you can find that has already been pitted)
250 grams hard feta cut into cubes
Dressing:
9 tablespoons olive oil
3 tablespoons white vinegar
1 crushed clove of garlic
salt and pepper

Method:
1. In a large saucepan boil the lentils with the bay leaf, the whole garlic clove and the oregano for about 30 minutes till lentils are cooked. Be aware that if overcooked they will turn to mush.
2. Drain, remove garlic and bay leaf and place in a bowl.
3. Mix the ingredients of the dressing by shaking well and pour over the lentils. Toss well.
4. Cover the bowl and place in the refrigerator for 20 minutes.
5. Remove from fridge, add all the other ingredients and mix well.
