Dora's recipe: Chicken with olives
A classic chicken casserole with tomatoes and olives just in time for winter
Ingredients
1 medium size organic chicken quartet
5 tablespoons olive oil
3 cloves of garlic thinly sliced
1 tablespoon of fresh thyme, marjoram or oregano finely chopped
5 tablespoons dry white wine
800 grams (approximately) ripe tomatoes peeled and finely chopped
1-¼ cups pitted kalamata olives
Salt and pepper to taste
½ teaspoon of sugar
Method
1. Season the chicken with salt and pepper
2. Heat oil in deep pan
3. Add the chicken, sauté turning on all sides fro 8-10 minutes until lightly browned
4. Add the garlic and herbs and cook for a minute
5. Add the wine
6. Add the tomatoes with the sugar; simmer till the chicken is half cooked approx 20 minutes
7. Add the olives, cover and cook for another 20 minutes on low heat till chine is tender and sauce has thickened
* Serve hot with pasta or rice
