Dora's recipe: Chicken with orange
A delicious simple winter meal, the way Greek food was intended
Ingredients
1 medium size chicken
3 large oranges, juiced
100 grams of butter
A little oil prevents the butter from burning
1/2 lemon, juiced
1 medium onion
Salt and pepper
Method
1. In a saucepan melt the butter with the oil
2. Saute the chicken well on all sides
3. Put chicken in a baking dish
4. Add the juice of the oranges and the lemon
5. Salt and pepper to taste
6. Cut the onion in rings or quarters and add to pan
7. Cover loosely with baking paper
8. Roast for about one hour
NOTE: Remove baking paper about 20 minutes prior to the finish.
I like to serve with mashed potatoes and slices of fresh orange.
