Dora's recipe: Olive bread
Use green or black, this olive bread is a great indulgence eaten hot with a smear of butter
Ingredients
1/2 kilo plain flour
1 teaspoon of salt
1-teaspoon sugar
5 tablespoons olive oil
20 seeded olives each one cut in four
1 satchel of dry yeast
A few drops of white vinegar
Warm water
Heat oven to 180 C
Method
1. In a bowl, place flour, salt, yeast, and the sugar
2. Mix and make a hole in the centre, put the oil in this hole, vinegar, and a little of the warm water
3. Using your hands start kneading adding the water slowly till it becomes a good pliable dough and sticks to your hands
4. Open the dough in the centre and put in the olives and kneed till the olives are spread as evenly as possible, trying to keep them all inside the dough as they will pop out while baking and burn.
5. Oil the outside of the dough, cover and place in a warm place to rise for 2 hours at least
6. Put in the bread tin and bake 40 - 50 minutes
Tip
If the house is cool, heat the oven to 50 C, put the bread in the baking and allow rising
Take the risen bread out, turn the heat up to 180 C and bake
You can use either black or green olives.
