Dora's recipe: Yellow pumpkin pita
Dora Kitinas-Gogos shows us a recipe that you can create with store-bought pita that tastes as good as home-made
Ingredients
1 packet of filo
1/2 cup olive oil
1 1/2 kilos of yellow pumpkin boiled and mashed in blender
4-6 spring onions cut finely
1 leak cut finely
1/2 bunch parsley finely chopped
1/2bunch dill finely chopped
2-3 medium carrots finely grated
2-3 eggs lightly beaten
1 cup of grated or crumbled Greek goat’s cheese
1 cup of black raisin
Lots of black pepper
Method
Grease pita baking dish with a little of the olive oil
1.
Put oil in a pan, leave heat and lightly saute spring onions and leak and put aside till cool
2.
In a bowel mix all the ingredients including the cooled onions and leek
3. Lay out a layer of filo
4.
Lay out a thin layer of the mixture
5. Lay one more filo
6.
Spread the remaining filling and cover with another filo
7.
Spray the top of pita with water as this prevents it from burning.
8.
Cut the pita trying not to cut to the bottom in triangles or squares or alternatively lay the top filo crumbled like a crumbled bed sheet and don’t cut till cooked
9.
Cook in a preheated oven of 180°C for 40 minutes
Allow to cool before cutting and serving.
