Dora's recipe: Yiaourtopita (yoghurt cake)
This yoghurt cake is the perfect savoury / sweet treat for a lazy Sunday afternoon
Ingredients
1 and 1/2 cups of sugar
2 and 1/2 cups of flour
2 cups yoghurt
5 eggs separated
2 and 1/2 teaspoons of baking powder
2 teaspoons of lemon zest
1 tablespoon of orange blossom water
Method
* Preheat oven to 180 C
1. Sift flour and baking powder and put aside
2. Beat the egg yolks with the sugar till white and fluffy, adding eggs yolks one at a time
3. Add yoghurt
4. Add the lemon zest
5. Add the flour and mix well
6. Beat egg white into a meringue
7. Add the meringue to the flour mixture mixing gently but thoroughly with a wooden spoon
8. Pour into a greased and lined cake tin and bake in a preheated oven of 180c for 1 hour
9. Cool and sprinkle with icing sugar and cinnamon
