Loukoumia (Turkish delight)
Feel like something sweet with your cup of coffee?
Ingredients
2 cups sugar
2 tablespoons cornflour
1 cup water
1/2 teaspoon cream of tartar
1 tablespoon flavouring *
Food colouring **
1/2 cup toasted nuts, chopped ***
Confectioners' sugar
* Flavourings: rose, mastic, strawberry, orange or lemon
** Food colouring: red, yellow, green or orange (depending on flavouring used)
*** Nuts: almonds or pistachios
Method
1. Dissolve sugar and cornstarch in water
2. Add cream of tartar and boil to 220 degrees F
3. Cover pot the last five minutes
4. Add flavour and food colour
5. Add nuts
6. Pour into oiled shallow pan
7. When cool, cut into squares and roll each piece in sifted powdered sugar
8. Store in airtight container
