Ingredients

250 grams of cooked chickpeas 1 medium onion finely chopped 1 to 2 cloves garlic crushed 4 to 5 tablespoons parsley finely chopped 4 tablespoon fresh coriander finely chopped 4 tablespoons mint finely chopped 2 teaspoon dried coriander powder 1 teaspoon cumin powder 1/2 teaspoon baking powder Olive oil for frying, there should be enough oil to almost cover the fritters Rocket leaves to serve

Method

1. Put all the ingredients in the blender till a smooth paste

2. With wet hands make round balls or flat fitters; this amount will make approximately 24 pieces

3. Heat the oil in a deep frypan and fry the fitters for 2-3 minutes till golden brown

4. Place on kitchen paper to strain the oil

5. Lay out on a bed of leaves and serve Here is a great sauce to go with the revithokeftedes 150 grams plain yoghurt 1 tablespoon of tahini 1 clove of garlic crushed Juice of half a lemon 2 tablespoons olive oil In a bowel mix all these ingredients with a fork till well blended.
