All the way from Limnos, this salad is great as you can replace the black eyed beans for other legumes.

Ingredients

1 cup of black eyed beans, boiled and cooled
3 – 4 radishes cut into quarters, or made into flowers
3 – 4 spring onions finely chopped
half a bunch of parsley
10 or so black olives
handful of pickles
1/3 cup of olive oil
1/3 cup red wine vinegar
salt and pepper

Method

1. Bring beans to the boil and empty first lot of water.
2. Cover with water again and cook till tender and drain.
3. Place cooked beans in a bowl or platter. Allow to cool.
4. Add parsley, onions, olives, oil, vinegar, pickles and toss.
5. Garnish with radishes.
