BACKGROUND: Victoria Market Seafoods has been operating fo seven years from Stall 36 at Melbourne’s world-famous Queen Victoria Market. Providing Melburnians fine fish runs in the family – George’s father had a fish and chip shop in Niddrie, Victoria.
BEST SELLERS: Our top selling lines for whole fish,we have the ever popular snapper, spotted and silver trevally, king george whiting, garfish. These are being caught anywhere from the Vic border with SA all the way to the border of New South Wales. We also ensure that our more than 45 lines appeal to customers familar with mediteranean seafood favourites.
ADVICE FOR BUDDING FISHMONGERS: To be a successful fishmonger you have to understand the freshness and quality of your seafood, but also what your customer is prepared to pay. The first qualification you need is to be able to function without much sleep. That’s the reality. We get up at about 2am and get back home at about 6pm. In our industry you have to make quick decisions regarding what you believe is the best product for your customer. You have a short window of opportunity every morning. Selecting quality at a price is the key skill.
FAVOURITE FISH DINNER: I’d have to go for king dory or king george whiting, pan fried with a dusting of flour, salt and pepper and and a sprinkling of herbs. And a drop of lemon juice. Just simple – the typical Greek way! FAVOURITE HOBBY: Any opportunity and I’m out in Port Phiilip Bay with my father-in-law having a fish. I can’t get enough of it!
