Ingredients:
500 grams white medium sized beans, soaked overnight or for 8 hours
a bouquet garni made up of 1 branch of fresh thyme or one tablespoon of dried, 1 bay leaf, some of the green leaves of celery, 1/4 bunch of parsley. Tie all this in gauze fabric.
4 new potatoes with the peel left on and washed well
4 sour green apples with the peel left on
juice of one lemon
1 curly red leaf lettuce, cut thickly
a few leaves of endive
salt and pepper
Dressing:
8 tablespoons of olive oil
4 tablespoons of white vinegar
1 tablespoon of mustard
salt and pepper

Method:
1. Drain beans, place in a big saucepan with lots of water and bring to the boil. Take off heat and drain again.
2. Put back in saucepan with lots of water with the bouquet of garni and cook for at least one hour on low heat or till beans are soft. At the end of cooking add salt and pepper.
3. Drain beans, throw out bouquet garni and put beans aside.
4. While beans are cooling, boil potatoes for about 20 minutes, testing with a skewer. When cooked – drain, allow to cool, peel and cut into cubes.
5. Cut and core the apples and cut them into cubes with the peel intact. Place in a bowl and add the lemon juice.
6. Mix all the ingredients for the dressing and beat well.
7. Place the beans, apples, potatoes and the greens together and toss with dressing.
