To make a bread with mastic from Chios, in the basic recipe add 1/2 teaspoon of very finely crushed mastic.

You can other other spices and herbs to your bread. I personally like aniseed but try mixing oregano, hot chilli flakes or mild thyme. And how about grated fresh onions as they do on the island of Karpathos?

Then there are the seeds. Linseed, sunflower seeds, poppy seeds, and many others. Use your imagination and your preferences to taste.
