Ingredients:
1 kilo of broad beans (if not in season, snap frozen can be found in your supermarket)
100 grams of good Greek strained yoghurt
1/3 cup olive oil
1 clove of garlic crushed (optional)
salt
1 tablespoon finely chopped mint

Method:
1. Boil broad beans till tender, do not overcook and drain.
2. Toss with olive oil, mint, yoghurt and salt.
3. If you wish you can add one clove of garlic in the yoghurt. Garnish with mint.
