When news got out that celebrity chef and MasterChef judge George Calombaris would be in Colombo, Sri Lanka, local foodies ensured they nabbed themselves a seat to taste some of his mouthwatering food.

The 38-year-old was in Sri Lanka to give a masterclass, which saw the chef in his element joking and chatting with his audience, and even stopping to take selfies.

“He was down-to-earth, funny, and an incredible food instructor! This was hands down one of the most memorable food experiences in Colombo!” attendee Tulsi Liyanage told the Daily Mirror.

“I loved that he came by to our seats, personally speaking to all of us! I never dreamed I’d get to see him in real life in Colombo.”

MasterChef Australia has a large following in Sri Lanka, which added to the hype around Calombaris’ visit, the event selling out weeks in advance.

The menu on the day featured a mix of classic and contemporary Greek flavours, showcasing how simple ingredients can result in big flavour combinations.

Participants learnt how to make a savoury version of the usually sweet loukoumades (Greek doughnuts), with a salt and vinegar combination paired with tea tarama.

The chef made sure to localise the menu, taking advantage of the local produce on hand. He prepared raw local fish with fava, caper leaves and pickled onions served with feta roti.

The food component of the class ended on a sweet note, with caramelised yoghurt and honeycomb topped with pineapple and creamy, raw cashew.

Participants then had the chance to pick Calombaris’ brain about all things food, the chef responding with useful tips and tricks.

“I really enjoyed being a part of the masterclass and was excited I had a chance to talk to George about my cooking,” said Jehan Aloysius, an amateur cook and longtime fan of the show.

“I was glad to get a few tips from him to add some excitement to the food I cook at home … It’s wonderful to see a MasterChef here this year as well.”

It was the Greek Cypriot Australian’s first time in the south Asian country, and when asked what he thought he had only positive things to say.

“You guys have got a really incredible country! You should cherish it and tell the world about it because it’s incredible. I’m going to be telling all my friends about Sri Lanka,” he said.
