Australian celebrity chef George Calombaris’ third venue will be opening in Williamstown in mid-June.

Contrary to what had been expected, Melburnians won’t be seeing another Hellenic Republic restaurant.

“I am so excited to share this exclusive news,” said George Calombaris.
“There’s been a lot of talk about a third Hellenic Republic opening in Melbourne’s west. Speculation galore.”

The Hellenic Hotel will be a seven-day dining and drinking destination encompassing modern Hellenic cuisine with a unique Greek wine offering.

Located on the iconic site of the former Hobsons Bay hotel, the destination will include a restaurant, an upstairs bar and verandah, plus takeaway.

“Hellenic Hotel will be bringing hearty Greek cuisine to one of the west’s most iconic pub buildings on the corner of Ferguson and James streets,” the chef added.
