Ingredients:
2 red peppers
4 tablespoons olive oil
1 small onion finely chopped or grated
1 clove crushed garlic
½ teaspoon dried chilli
½ cup walnuts very finely crushed
2 teaspoon red wine vinegar
¼ teaspoon salt

Method:
1. Cut peppers in four, place in preheated hot oven, skin up, bake for approx ¾ till the skin brakes, peel.
2. Warm one-teaspoon of oil, place peppers in a bowl with onion and garlic and mix with warm oil, soak till soft.
3. Add all other ingredients and mix well with a fork till a thick paste.
Chill and serve.
