Note: This version of tzatziki can be made without straining the yoghurt, but if you prefer a spread, use strained yoghurt. This is a party-size recipe and can be halved if needed.

Ingredients:
500 grams of good thick Greek yoghurt
1/3 cup very good olive oil
juice of one lemon
1/4 teaspoon of salt
2 – 3 cloves of garlic
1 cup of crushed walnuts

Method:
1. Mix all the ingredients with the yoghurt. The above quantities are approximate as there is room for individual taste, more garlic or less, maybe less olive oil as walnuts have their own oil. I always make this recipe up as I go along.
