Baklava fans, brace yourselves; Australia is getting its first ever Baklava Bar in the heart of Port Melbourne.

Since opening the doors to blu spoon in 2014, owners Conrad Manolidis and Anna Provataris have won the hearts of locals with their frozen Greek yogurt and house-made toppings, including traditional Greek sweets revani, melomakarona and a host of others. But it was their baklava that had everyone raving, and so together with their mothers, they are bringing their customers something special.

“Baklava seems to be a running theme throughout our business,” Manolidis told Neos Kosmos.

“We’ve got baklava ice cream, baklava frozen yogurt, chopped up baklava in our condiments where you can put it on top of your yogurt. It’s one of those things that everyone associates Greeks.”

So the pair are embracing it and taking it to the next level by creating variations of the dessert that will be available fresh daily in packs to take home in an alternative take on the humble zaharoplasteio.

With quality a priority for both Manolidis and Provataris, they wouldn’t trust anyone but their mothers in the kitchen. But Manolidis admits the baklava is his mother’s speciality, who was born in Didymoteicho, a small city a stone’s throw away from Turkey, the home of baklava.

Made from secret recipes handed down from mother to daughter, she has been making the iconic dessert since she was nine years old, so each piece of baklava is made with love bringing with it beautiful memories of life back home.

But this isn’t baklava like you know it.

“I started talking to my mum and she mentioned how she remembers making other combinations of baklava growing up and then we started looking at modernising versions of that,” Manolidis said.

The resulting combinations are better than you could ever dream: chocolate and Nutella, orange and hazelnut, rose petal and pistachio browned butter, and cheesecake amongst others, but the favourite thus far is definitely the salted caramel.

Luckily enough you don’t have to wait too long to try the goods with the launch taking place next week on Tuesday 22 November.

The afternoon will be abuzz with foodies and bloggers, where you can go along and try all the different types of baklava on offer, which will also be available for purchase so you can take some home and share your favourites with family and friends.
