INGREDIENTS
2 cups brown lentils,
2/3 -cup olive oil
2 medium onions diced
3-4 cloves garlic sliced
2 small carrots diced
1 stick of celery leaves included diced
Small branch of fresh bay leaf or 2 -3 bay dried leaves
1 small branch of rosemary or a teaspoon of dried
2 fresh tomatoes grated or diced tinned tomatoes
1- teaspoon tomato paste diluted in small amount of water
¼ teaspoonful salt
¼ teaspoonful pepper
2- tablespoons of wine vinegar (brown or white will do).
METHOD
1. Clean lentils of any stones etc. and soak for about 30 minutes.
2. Drain, fill with water at least 2-3 centimetres above the lentils.
3. Add all ingredients and bring to boil.
4. Turn heat down and simmer for about 1 hour or till lentils are cooked.
5. More salt, pepper or vinegar can be added to taste.
6. It should now be a thick consistency not quite soup.
Serve with olives, fresh spring onions.
