Ingredients

500 grams fasolia handres
500 grams seskoula
1/2 cup olive oil (approx)
2 medium onions finely chopped
1 large tomato grated thickly

Method

1. Boil the handres in plenty of water and strain

2. In a wide saucepan put in one tablespoon of water and add the seskoula and stir until they wilt, then strain the leaves
3. In a frying pan heat the olive oil and saute the onions

4. Add in the tomato and cook for 5 minutes until most of the water has evaporated

5. Add the handres and seskoula and add in salt and pepper to taste
Note: If you can’t find cranberry beans, substitute with black eyed beans and if seskoula is not available any greens that in season like endives will do.
