Hummus is easily one of the most recognisable dishes made with chickpeas. This mezze can be found not only in Greece, but in Cyprus and all over the Middle East and each country and even region, has their own variation on this classic dip. The important thing to remember for this dip is that you can used tinned chickpeas or prepare them from scratch for a fuller nuttier flavour.

Ingredients

2 1/2 cups of canned chickpeas, drained and rinsed 1/3 cup of freshly squeezed lemon juice 1/4 cup tahini 2 cloves of garlic, crushed 2 tablespoons olive oil 1/2 teaspoon ground cumin 1/2 teaspoon cayenne pepper (optional) 1/3 cup water

Method

Put chickpeas, garlic, olive oil, tahini, cumin, cayenne pepper and lemon juice in blender and blend till combined, add water and process till smooth.
