INGREDIENTS

1 ½ kilos potatoes
2 onions
1 tablespoon tomato paste
5 – 6 ripe tomatoes peeled and cut
½ cup olive oil
2 cloves of garlic
2 bay leaves
5 – 6 pepper corns
4 – 5 cloves
1 cup water
Salt and pepper

METHOD

1. Peel, wash cut potatoes in large cubes

2. Put oil in heavy saucepan and sauté finely cut onions with crushed garlic till translucent.

3. Add tomato paste that has been diluted with a small amount of water

4. Add crushed tomatoes

5. Add bay leaves, peppercorns, cloves, salt and pepper and allow all this to cook for about 5 minutes on low heat

6. Add potatoes, cook till potatoes are done and the sauce has thickened.

7. This dish can be eaten as is or as an accompaniment with other dishes.
