Dora's recipe: Fried cauliflower
Fried cauliflower is another great meze to sample while fasting
Ingredients
1 small cauliflower cut in bite size pieces, washed well and drain
½ cup chickpea flour
2 teaspoons cumin
1 teaspoon coriander
1 teaspoon turmeric
Cayenne pepper
1 teaspoon salt
1 beaten egg
1 egg yolk
¼ water
Oil for frypan
Method
1. Mix flour with cumin, coriander, turmeric, and cayenne pepper, salt
2. In a bowel beat together, water, egg yolk and whole egg, add this to the flour mixture and mix with a whisk till light batter is formed
3. Allow standing for ½ hour
4. Heat enough oil for deep-frying
5. Dip each piece of cauliflower into batter and drop into hot oil, remove after 3-4 minutes.
6. Drain on paper towel.
