Ingredients

300 grams tahini
300 grams sugar

½ cup cognac

650 grams plain flour

2 tablespoons bi carbonate soda

orange juice
Zest of one orange

50 grams of crushed walnuts

½ teaspoon cinnamon

½ teaspoon clove powder

100 grams sultanas rolled in flour (optional)

Method

1. Put tahini and sugar in a bowl and beat well and add cognac

2. Sift flour with bi carbonate of soda and add to sugar mixture

3. Add orange juice and continue to mix

4. Add cinnamon and clove

5. Mix well and add walnuts and zest of orange

6. Continue to mix till all is incorporated

7. Grease an oven dish and bake in a moderate oven 180c covered with baking paper for about ¼ hour, remove and bake another 20 minutes till golden brown
8. Cool before cutting
