Ingredients

10 sheets of filo
400 – 500 grams black pitted olives
250 grams feta
3 – 4 leeks
4 spring onions
1 medium onion
1 large ripe tomato
100 mls olive oil
1 teaspoon sweet paprika
1/2 teaspoon hot paprika (optional)
Method
* Heat oven to 200°C
1. Chop all the ingredients into very small cubes
2. Rinse the olives and strain well, cut in small pieces and put aside
3. Crumble the feta and put aside
4. Heat the oil and saute all the vegetables till all the water is evaporated
5. Put aside to cool
6. Add the olives, feta and paprika
7. Divide the mixture into 5 lots
8. Cover a flat baking dish with baking paper
9 Make 5 sheets of filo consisting of 2 sheets each and oiled between each sheet
10. Put an amount of mixture in the filo and roll into a long strip
11. Place each roll side by side into the lined pan
12. Bake for 45 minutes
Chicken with olives
Ingredients
1 medium size organic chicken quartered
5 tablespoons olive oil
3 cloves of garlic, thinly sliced
1 tablespoon of fresh thyme, marjoram or oregano finely chopped
5 tablespoons dry white wine
800 grams (approximately) ripe tomatoes, peeled and finely chopped
1-1/4 cups pitted kalamata olives
Salt and pepper to taste
1/2 teaspoon of sugar

Method

1. Season the chicken with salt and pepper
2. Heat oil in deep pan
3. Add the chicken, saute turning on all sides for 8-10 minutes until lightly browned
4. Add the garlic and herbs and cook for a minute
5. Add the wine
6. Add the tomatoes with the sugar; simmer till the chicken is half cooked – approx 20 minutes
7. Add the olives, cover and cook for another 20 minutes on low heat till chicken is tender and sauce has thickened
* Serve hot with pasta or rice
Cold pasta with olives
Ingredients
1 packet of spiral pasta
1 can of tomato puree
400 grams of pitted black olives
200 grams feta cheese crumbled
1/2 cup of very good olive oil
1 -2 teaspoons of oregano
Salt and pepper to taste
Some fresh flat leaf basil
Method
1. Cook pasta, put aside to cool
2. Place the cooled pasta in a bowl and add all the ingredients except the basil
3. Mix well and put the fresh basil on top before serving
Note: This is a very easy meal and delicious, I have made it often on the spur of the moment when I run out of ideas.
