Carrot cake

This is a cake recipe that a friend in Greece gave me many years ago. I have made it over and over again and it has never failed me.

Ingredients

3 cups of grated carrot
1 cup of coarsely ground walnuts
1 cup of canola oil
4 eggs
2 cups of plain flour
2 cups of sugar
1 teaspoon baking powder
1 teaspoon of bi-carbonate soda

Heat oven to a moderate 180c

Method

NOTE: You can mix this in the mixer but make sure when the flour is added that the mixing is gentle or better still at this stage fold in the flour with a wooden spoon as beating the flour mixture to much creates a bread like dough and makes the cake hard, the reason being that the gluten gets stretched to much, this goes for all cake mixtures.

1. Grease and line with baking paper a cake tin
2. Sift the flour, baking powder and bi-carbonate together, leave aside
3. Beat oil and sugar for about eight minutes
4. Add one egg at a time and beat for one minute each egg
5. Add carrot and walnut
6. Add flour mixture and mix well
7. Pour mixture into greased and lined cake tin
8. Bake for 45 – 50 minutes, pierce with skewer make sure it comes out dry
9. Allow cooling moderately and then turning out on cooling tray to cool off completely
