Pork with sage
Ingredients:
1 whole fillet of pork cut into medium slices
A little olive oil
1 small onion finely cut
1 clove of garlic crushed
A few mushrooms cut into slices
1 teaspoon flour
1/3-cup brandy
1/3 cup red wine
2 tablespoons of pine nuts
Beef stock or sock from a stock cube (about 1-2 cups)
A few eaves of fresh or dried sage
1-tablespoon parsley finely cut
Salt and pepper
Method:
1. Flatten the pork slices with you hand, do not beat the meat
2. Salt and pepper the pork and roll in flour and saute in the olive oil that has been heated
3. Remove from the frypan and saute the onion, garlic and mushrooms till translucent
4. Add the meat fillets and the pine nuts, brandy and wine.
5. Add the stock (enough to barley cover the meat), the sage, parsley
6. Allow to cook till meat is tender only a few minutes
7. Serve with pasta or rice
