Ingredients

4 large potatoes new with the skin on, cleaned and washed thoroughly
1/2 cup of grated or finely cut onion
2 cups of finely cut spinach
1/2 teaspoon Cayenne pepper
1/2 teaspoon Pepper
1/4 teaspoon salt
1/2 cup milk
1/4 cup of finely grated kefalotiri or kafalograveira
Olive oil

Method

Heat the oven to 190C

1. Pierce the potatoes in 3-3 place and brush with olive oil lightly
2. Bake them till the skewer goes right through
3. Mean time sauté the onion with a little oil and add the spinach and stir for about 30 seconds till wilted
4. Place in a bowl, cool a little, add the milk and the salt and pepper
5. When the potatoes are cooked cut in the half and scoop out the centre pulp leaving a good strong shell to stuff
6. Mash the potato and mix with the spinach mixture
7. Fill the potato shells with this mixture, sprinkle with the cheese and the cayenne pepper
8. Bake for 20 minutes
