Ingredients
500 grams of pork that is suitable for frying without bone cut into bite size pieces
1 red capsicum diced
1 yellow capsicum diced
1 medium onion diced finely
1 clove garlic
2 tear drops of mastic crushed
1/2 cup of white wine
1/2 water or stock
200 ml fresh cream at room temperature
4 tablespoons olive oil
Salt and pepper
Method
1. In deep fry pan heat oil and sauté pork with the capsicums
2. Add the garlic and stir for a minute
3. Add the wine
4. Add the water/stock and the mastic
5. Allow cooking on very low heat, cover
6. When meat is very tender add the cream and cook for five minutes and remove from heat
