Ingredients:
1 kilo of stewing beef (never use a cut of meat that is without fat when stewing as it will dry out) cut into bite size cubes
1-2 kilos of baby shallots (small onions) parboiled and peeled
1 and 1/2 cup of dry red wine
1/2 cup olive oil
1 large onion finely chopped
2-3 cloves of garlic finely chopped
50 grams tomato paste
1 can of peeled and crushed tomatoes
2-3 bay leaves
6-8 whole cloves
6-8 pepper corns
2 tablespoons of wine vinegar
1teaspoon cumin
1/4 teaspoon cinnamon
Salt and pepper to taste
Method:
1. In a deep saucepan heat the oil and saut<00E9> the small peeled onions and set aside
2. In the same oil saute the meat cubes and set aside
3. Saute; chopped onion, garlic till translucent and add the meat
4. Add the tomato paste, peeled tomato all the spices and wine
5. Cover with hot water and allow to cook on very slow heat for about one hour
6. Add the small peeled shallots, cover and allow another hour
7. Season with salt and pepper to taste while cooking
8. The sauce should be thick. If it is too runny, take the lid off and allow to cook for a few more minutes
9. Serve with rice or mashed potato
