Ingredients:

1 cauliflower
1/2 cup of kefalograviera grated
2 tablespoons of flour
2 eggs
Juice of one lemon
Salt
Canola oil for frying (you can use another oil but not olive oil)

Skordalia recipe:

100 grams of walnuts
2 slices of stale bread
3 cloves of garlic
1/2 cup olive oil
3 tablespoons of vinegar
A pinch of salt

Method:

1. Boil the cauliflower in salted water till tender but still firm, without the lid on (without the lid prevents the cauliflower from discolouring)
2. Strain and break up into small flower bunches
3. In a bowel beat the eggs and add the cheese
4. Dip the flowers into the flour and then into the egg mixture
5. Fry in very hot oil till brown for a few seconds
6. Make the skordalia by putting all the ingredients except the oil into a blender and pulp
7. Add the oil slowly while still pulsing on low speed till the mixture is a paste
8. Serve the cauliflower pieces with the skordalia
