Serves 6 – 8

Ingredients:
220 gms sugar
7 tablespoons ouzo

Method:
Stir the sugar into 750 ml (26 fl oz/3 cups) of water and bring to the boil. Simmer for 5 minutes. Cool. Stir in the ouzo and transfer to an ice-cream machine. Freeze following the manufacturers instructions. Alternatively, pour into a shallow tray and put in the freezer, breaking it up and beating with a fork 3 or 4 times before it becomes solid.
