Ingredients:
600 grams cooked chickpeas (tinned ones are as good)
2 tablespoons olive oil
4-5 tablespoons of breadcrumbs
2 tablespoons of fresh dill finely cut
4-5 tablespoon finely cut flat leaf parsley
1/2 teaspoon cumin
1 teaspoon thyme
2 eggs
250 grams of spinach that has been blanched
Salt and pepper
Method:
1. Blend chickpeas and empty a bowl
2. Add the thyme, cumin, salt and pepper, parsley, dill, spinach that is well drained, the eggs and breadcrumbs
3. Mix well with hands till well mixed and able to make fritters, if not thick enough add more breadcrumbs
4. Make into flat fritters and fry lightly in heated oil
5. Drain on kitchen paper and serve with a salad
