Serves 4

Ingredients:

4 ripe tomatoes, chopped into chunks

4 rounds buffalo mozzarella

100 ml (3 1/2 fl oz) extra virgin olive oil

50 ml (1 3/4 oz) red wine vinegar

1/2 cup basil leaves

Salt and pepper to taste

 

Method:

1. Onto a large platter, place the chopped tomatoes

2. Tear the mozzarella balls into pieces and scatter amongst the tomatoes

3. Make the dressing by combining the oil, vinegar, salt and pepper in a jar and shake until combined

4. Pour the dressing over the tomato and mozzarella and sprinkle with the basil leaves. I like to combine all the ingredients with my hands gently and serve.
