Ingredients:

500 grams of good Greek yoghurt that is not too sour

1/4 cup very good olive oil

1 tablespoon white vinegar

Juice of one lemon

Salt

2 cloves of garlic

1 cup of grated carrot

 

Method:

1. Put yoghurt in a thick cheesecloth and strain for at least half a day or overnight

2. Mix all the ingredients with the strained yoghurt

3. The above quantities are approximate as there is room for individual taste, more garlic or less, maybe a little olive oil. I always make this recipe up as I go along
