Ingredients:

2 red peppers

4 tablespoons olive oil

1 small onion finely chopped

1 clove crushed garlic

1/2 teaspoon dried chilli

1/2 cup walnuts very finely crushed

2 teaspoon red wine vinegar

1/4 teaspoon salt

 

Method:

1. Cut peppers in four, place in preheated hot oven, skin up, bake for approx 3/4 till the skin brakes, peel

2. Warm one-teaspoon of olive oil, place peppers in a bowl with onion and garlic and mix with warm oil, soak till soft

3. Add all other ingredients and mix well with a fork till a thick paste. Chill and serve.
