Ingredients:

250 grams of white bread without the crusts

100 grams milk

60 grams butter

75 grams sugar

4 egg yolks

50 grams of fine almond meal

1 teaspoon baking powder

50 grams of fie bread crumbs

10 grams plain flour

4 egg whites

25 grams sugar

1/2 teaspoon cinnamon

450 cleaned and pitted cherries

 

Method:

1. Soak the bread in the milk for at least 2 hours

2. Beat the butter with the 75 grams of sugar and add the egg yolks one at time and beat

3. Add the soak bread with the milk and continue to beat till all is mixed well

4. Add the flour, baking powder and the almond meal mixing this by hand and not the mixer

5. Add the cherries, cinnamon and breadcrumbs all very gradually and mix by hand

6. Beat the egg whites with the 25 grams sugar till stiff on a low speed

7. Add to the rest of the mixture making sure that you turn the mixture gently as not to take the air out of the meringue

8. Empty in an oven proof pie dish and bake in a preheated oven of 180 C for 30-40 minutes
