Ingredients:1/2

cup water
1 cup sugar
1/2 fresh lemon juice
6 cups fresh strawberries
1/2 cup white rum
Lemon slices and whole strawberries for garnish.

Method:

1. Heat the water and sugar in a saucepan over medium heat stirring constantly until sugar dissolves
2. Remove the syrup from the heat and allow to cool and empty into large bowl and toss with lemon juice
3. In blender beat strawberries for 1-2 minutes to make puree and pass a sieve to remove any seeds
4. Add the pulped strawberry syrup and stir to combine.
5. Pour the rum and pour into a pan for freezing (26 x 18 cm)
6. Put in the freezer for 3 hours, stirring the sorbet every one hour to break the ice crystals
7. Just before serving, add the mixture in a blender and beat for a few seconds to a mixture of soft as snow
8. Pour into tall glasses garnished with strawberries and lemon slices and serve immediately
