This recipe has flavoured olive oil. This is very easy to do. In a bottle of olive oil put in your preferred aromatic and allow standing for at least 24 hours. The longer it stand the better the flavour. For a great salad oil infuse with fresh rosemary, or fresh thyme.

INGREDIENTS:

100 mls of olive oil with orange, grapefruit or tangerine flavour
½ litre of milk
250 grams of heavy cream
150 grams sugar
5 eggs yolk

METHOD

1. Warm the milk, the cream and the slit pod of vanilla.
2. Mix the egg yolks and the sugar until the mixture is white; incorporate the warm milk a little at time while whipping.
3. Cook on medium heat and keep stirring, incorporate the oil and let cool off.
Put in the freezer for three hours minimum
