Ingredients:
250 grams of soft unsalted butter
small amount of butter for greasing baking tin
2 cups white sugar
3 cups plain flour
6 eggs
2 teaspoons baking powder
3/4 teaspoon Bi-Carb soda
1 cup warm milk
2 tablespoons fresh lemon juice
2 teaspoons of mahlepi (you can use vanilla as another option)
1 and 1/2 cups of finely crushed walnuts.
1 coin cleaned and wrapped in foil
Icing sugar and cinnamon to decorate
Method:
1. Preheat oven to 180C and grease a 31 centimeter round tin always lining the bottom with baking paper (can have a slightly smaller tin if so wish)
2. In a mixer beat the butter with the sugar till white and creamy
3. Add the eggs one at a time blending well
4. Add lemon juice
5. Sift flour, mahlepi, baking powder and bi-carb together
6. Add the flour gradually and mix
7. Add the milk at the same time as the flour mixture (do it by alternating)
8. Add the walnuts
9. Pour into greased pan and put coin in the center
10 Bake for 40 minutes , testing with a metal skewer in the centre, the skewer must come out dry, if needed bake for a further 3 or 4 minutes
11. Turn out, allow to cool and decorate with icing sugar and cinnamon
NOTE ON BAKING: 40 minutes is enough if using a 31 centimeter pan, if using smaller pan will be bigger in hight and may need 5 minute longer so the center can cook.
