Ingredients:
1 cup of olive oil
1 kilo yellow pumpkin, cleaned and cut into cubes
1 onion, peeled and cut finely
2 cups (approx.) of warm water
1 cup sour trahana
salt and freshly ground pepper
Method:
1. In a saucepan heat oil and sauté onion and pumpkin for about 4 minutes.
2. Add one cup of the water and allow the pumpkin to soften but not overcook.
3. Add the trahana, salt and pepper and another cup of water.
4. On a low heat cook till trahana is cooked.
5. Serve hot
Note: The pumpkin in Greece is much softer and is easy to cut raw. Find one that is softer than the big one that is hard to cut raw.
