Ingredients:
450 g cornflour
60 g sugar
200 g of dark raisins
80 ml fresh orange juice
zest from 1 orange
pinch of salt
460 ml warm water
150 ml of canola or sunflower oil
Method:
1. In a bowl put the cornflour and pinch of salt, add the warm water, slowly stirring until the mixture is a batter.
2. Add the sugar, raisins, zest and juice of orange and mix well.
3. In a flat frypan heat 2-3 spoonfuls of oil on a high heat.
4. With a tablespoon, pour mixture into oil and allow to spread, frying on both sides, remove and put on kitchen paper to absorb excess oil.
5. Place pancakes on a platter, sprinkle with sugar and cinnamon and serve hot
