Ingredients:
2 litres of fresh milk
2 cups fine semolina
1 1/2 – 2 cups sugar (depending how sweet you want it)
1 tsp vanilla
5-6 eggs
5 filo sheets
2 tbsps cinnamon
2 tbsps sugar
1/2 cup unsalted melted butter
Method:
1. With a mixer at high speed beat sugar with 3 or 4 eggs and vanilla.
2. Heat milk in a saucepan and stir slowly.
3. Add the semolina, stirring constantly.
4. Withdraw the pot from the heat and slowly add the sugar mixture to the eggs and put the pot back over low heat and stir the cream to thicken without it becoming grainy.
5. Leaving aside the semolina mix, butter the pan.
6. Mix 2 tablespoons of sugar and cinnamon and begin to lay the 5 filo sheets, buttering them and sprinkling with the cinnamon/sugar mixture between each sheet.
7. Once 5 sheets are laid with the protruding edges of the pan, add the cream and turn the edges inward.
8. Beat the remaining eggs and pour the creamy mixture on the filo sheets.
9. Bake in moderate oven for 45 minutes.
10. When you take the pan from the oven, sprinkle with a little sugar and cinnamon before serving.
