NOTE: You might like to use butter for the greasing of the filo

Ingredients:
1 packet of filo pastry
6 eggs, lightly beaten
3 cups milk
250 g of grated mixed cheese, kefalograviera and other hard cheese
250 g feta
white pepper
3/4 cup of olive oil
1/3 cup of soda water

Method:
1. Beat the eggs with the milk in a large bowl.
2. Add all the cheese and white pepper.
3. Add 3 tablespoons of olive oil and mix well.
4. Heat oven to 200°C.
5. Grease baking pan and lay out the pastry, lay half the quantity on the bottom and always grease with the oil between layers.
6. Spread mixture on pastry and cover with remaining filo pastry, greasing between layers.
7. Do not cut before baking but make small incisions with a sharp knife.
8. Spray with soda water.
9. Bake for about 1 to 1 1/2 hours till pita has browned well.
10. Remove from oven, allow to cool slightly before cutting, and serve at room temperature.
