Broad beans feature strongly in the Greek diet. The beauty about these legumes is if they aren’t in season, you can always compensate by using snap frozen ones found in your local supermaket.
Ingredients
1 kilo of broad beans
100 grams of good Greek Yoghurt
1/3 cup olive oil
Salt
1 tablespoon finely chopped mint
Method
1. Boil broad beans till tender, do not overcook and drain.
2. Toss with olive oil, mint, yoghurt and salt.
3. If you wish you can add one clove of garlic in the yoghurt.
4. Garnish with mint.
