Ingredients:
1 organic chicken
4 slices of bread, crust discarded
300 grams walnuts finely chopped
1/2 cup of chicken stock
1 clove of garlic crushed
4 tablespoons olive oil
Cumin or coriander
Red pepper
Salt and pepper
Method:
1. Boil the chicken till cooked and when cooled pull apart and discard the bones
2. Soak the bread and squeeze out the water and blend
3. Add the walnut, garlic, cumin, salt and pepper, the chicken stock and mix well
4. Keep 1/3 of the mixture in a bowel
5. In a deep serving dish place the remaining mixture, add the chicken and mix well
6. Cover this mixture with the left over mixture
7. Mix the red pepper with the oil and pour on top
8. Serve cold
