Ingredients:

2 cups of yellow lentils

3 cups water

1 onion

Salt and pepper to taste

1/2 cup olive oil

2 spring onions

5 to 6 olives

 

Method:

1. Boil yellow lentils on high heat till froth appears, lower heat and scoop froth and discard, add cut chopped up onion, cook on low heat till lentils become mash and water has evaporated and consistency is thick

2. Blend, add salt pepper and 1/4 of the olive oil and mix

3. Place in a bowl, garnish with spring onions and olives and sprinkle the remaining olive oil on top

4. To get a cutting consistency add as little water as possible and cook slowly
