NOTE: this recipe works best cooked in a pressure cooker

 

Ingredients:

1 and 1/2 half kilos of kolokithakia left whole if the are small and cut in two or three depending on the size (kolokithakia in Greece are small and that is the way the recipes are calculated)

2 tablespoons tahini

1 bunch of spring onions chopped

1 onion chopped

1/2 bunch of dill

A little mint

2 cubes of vegetables stock

A little oregano

Juice of 1 lemon

1 cup water

 

Method:

1. In a pressure cooker put in all ingredients except the dill and the lemon juice

2. Allow to boil and 8 minutes after the pressure has started take off the heat

3. Beat the tahini with the lemon juice

4. Add to the kolokithaki in the same way as an avgolemono is added by adding a little of the hot water from the saucepan and the empting it all in the kolokithakia and shaking the saucepan
